100ml Bottle of Glycerine.
It is often used to soften and relax icing but can also be added to cake recipes where flour is used to create a softer crumb texture.
To prevent royal icing from setting too hard simply add 1 teaspoon of Glycerine per 500g (1 lb) icing after the icing forms stiff peaks.
When adding to cakes, use 1 teaspoon of glycerine per 100g flour.
Glycerine is a viscose, clear, colourless liquid with a slightly sweet taste. It can be dissolved into water or alcohol, but not into oils.
