1 1/2 cups all-purpose flour
2 tsp baking powder
1/2 cup granulated sugar
1 egg, beaten
1/2 cup low-fat almond milk
1/4 cup canola oil
2/3 cup low-fat greek or low-fat plain yoghurt
This makes the muffin mixture, add fresh blueberries or lemon juice and poppy seeds depending on what kind you want to make
Pre-heat oven to 230 degrees
Grease and line a muffin tin to make 12 muffins.
Mix together the flour and baking powder
Separately mix together the wet ingredients and whisk until smooth
Combine the wet and dry ingredients though be careful not to over mix
Evenly distribute the batter throughout the tin.
Bake for 20 minutes. Muffins should be golden and springy to the touch.
Let the muffins cool on a cooling rack for 10 minutes, then enjoy!
